Oat Blueberry Protein Slice 🫐

This Oat Blueberry Protein Slice is a perfect blend of nutritious oats, protein powder, and juicy blueberries. It's great for a post-workout snack or a quick energy boost throughout the day!
Ingredients
- 2 large eggs
- 500g almond milk
- 1 teaspoon vanilla extract
- Pinch of sea salt
- 1 teaspoon cinnamon
- 200g oats
- 60g protein powder
- 35g peanut butter powder
- 100g sweetener
- 140g frozen blueberries
Method
- Preheat the oven to 180°C (350°F).
- In a mixing bowl, combine the eggs, almond milk, vanilla extract, sea salt, and cinnamon.
- In another bowl, mix together the oats, protein powder, peanut butter powder, and sweetener.
- Stir the dry ingredients into the wet ingredients until well combined.
- Gently fold in the blueberries.
- Pour the mixture into a baking tray lined with parchment paper. Use a tray approximately 9x9 inches (23x23 cm) for best results.
- Bake for 40 minutes, or until golden brown and set in the center.
- Allow to cool in the tray for 10 minutes before transferring to a wire rack to cool completely.
Notes
- Adjust the sweetener to your taste preference if needed.
- For an extra touch, consider adding a sprinkle of cinnamon or a drizzle of almond butter on top before baking.
- I use Amazonia protein powder and Marmadukes peanut butter powder in this recipe, but feel free to experiment with your preferred brands.
